I've had two instances where my ski wouldn't go fast. One was because of a bad fuel pump. The other was a bad temperature sensor. I guess I could also say bad jetting caused me aproblem once. I was way too rich.
The Kawi start/stop button could probably be made to work, but it'd be easier to find a Yamaha switch. You'd need a conversion bedplate to mount the engine (or glass the Yamaha mounts in), and a Kawi-style driveshaft coupler to replace the original Yamaha driveline coupler that's on the back...
What makes it the wrong head gasket? It's been awhile since I've seen an OEM head gasket but it seems it also had small holes for the water to flow through. The holes act as sort of a thermostat.

You have a Superjet, right? Maybe you need to try a steeper impeller (if you think your jetting is correct) to take advantage of the extra torque that the 760 cc should be giving you. Or, a smaller pump nozzle.
The 701 62T Waveraider does 51-52mph stock with dual 38mm carbs. I would guess that your jetting and/or b pipe setting could probably be adjusted for more RPM's.
The SXi came out in 1995 but I think the only real diffrence with it was dual carbs. The hull is the exact same as the SX.
That price sounds reasonable, if you want a 750SX.
My cousin and I just burned some oil in our skis, oil that was at least 3 years old and unsealed... I don't think oil is rocket science, if it looks good then it is good in my experience. Except I wouldn't use it in a Seadoo.
