Im gonna say go for the 440.your a pretty tall dude idk if you will be comfy on the 300.Yes the 440 is pretty old but really both of them are pretty old.I have a 77 440 and its still holding together very well.Both are kind of expenisive really,im sure their isnt much...
you need to just eliminate all the line and everything in the path.the back and forth hose to the on/res plug the other holes and just run a direct fuel line,filtered of course and a return.pretty easy this happens to everyone

That bolt looks like it came out of the stator cover or the starter.you also could have a leaking intake gasket witch could create a vacuum leak and make it run like poo poo pooo.550s do have somewhat of a small studder sometimes,try the low jet thing.also check the fuel lines,tank for cracks it...
you can do a few things to them but you will never really make it that fast.u need to just swap a 440+ in it.If you cant do that then you could get things like a pipe,filter,carb jetting,water box mod or custom waterbox.
These carbs have to be tuned to a t or they dont like to work right.Another thing i did on both of mine to help fuel flow better is delete that On/res lines that are ran by that switch up front.
