As you know I have a garden and I ended up with a ton of bell peppers this year , so I was looking for a different type of stuffing , I came up with the idea of using fried rice. I was able to stuff ten bell peppers with this amount but my bell peppers are not as big as the ones in the store so figure 4 to 6 at best.
I cooked four of them last night and put the rest in a dish in the freezer ,so next time I can just pop them in the oven and cook them.

2 Cups cooked rice
2 eggs scrambled
2 tsp soy sauce
1 fried rice seasoning packet
1 cup stir fry vegetables
2 TBSP cooking oil
meat (optional )
Shredded cheddar cheese (optional)

Cook the rice , scramble the eggs , combine everything in a large skillet with two tablespoons of cooking oil , cook on high heat stirring constantly , cut and core the bell peppers , stuff with the fried rice mixture , cook at 350 degrees for 45 minutes, at about 30 minutes I pull the out and stuff the shredded cheese in the top then cook the other 15 minutes , I eat my with sweet and sour sauce but you do you.

Fried green beans

Whole green beans , fresh not canned
1 egg
bread crumbs

scramble the egg, dip the while green bean in the egg , then dredge it in the bread crumbs , if you have a deep fat fryer thats the best way to cook them but they cook just fine in a skillet or possibly an air fryer nut being from the South I know nothing about an air fryer , sounda kinda like an air guitar to me ,
Serve with ranch dressing , yummy yummy

I made up a batch from some fresh pole beans I picked earlier today so I added a pic and yes I am still picking pole beans in October about to be November .

Loaded grits : Southern style

Grits
1 egg
bacon # of pieces is up to you
shredded cheddar cheese , add as much as you like
1 medium chopped tomato
1 pinch salt

cook the bacon while the grits are cooking, put the cheese and tomato in the grits , crumble the bacon and put it in, then fry the egg in the bacon grease and add it , yeah I know what you are thinking ,tomato why , trust me I have been eating grits my whole life , the tomato addition was life changing , the combination of the tomato , bacon, egg cooked it the bacon grease and the cheddar cheese is so good it will make you want to slap yo momma !

Loaded hash browns

Tater tots , for one person I use about 10-12 scale up form there
sausage I use link sausage and chop it up finely
eggs for one person two eggs scale it up from there
bell peppers , finely chopped I use about 1/4 cup
tomato , finely chopped
cheese shredded as much as you like

Put the tater tots in a pyrex dish , beat the eggs , add in the tomato and bell peppers and mix it all up coating the tater tots , cook in oven at 350 degrees for around 30 minutes , when it's done can mash it up or eat as is , tater tots are just hash browns formed into cylindrical shapes , hash browns without all the hassle .
 
Apparently soy contains a different type of estrogen, don't quote me on this but I recall hearing something about this a while back. I didn't know there are different types of it, but the one soy carries is a rather unhealthy one. Here is a little quick search look up result...

"Soy is unique in that it contains a high concentration of isoflavones, a type of plant estrogen (phytoestrogen) that is similar in function to human estrogen but with much weaker effects. Soy isoflavones can bind to estrogen receptors in the body and cause either weak estrogenic or anti-estrogenic activity."
Where we get the term "soy boy" from haha
 
I found this brand of sauces from bbq to cooking and glazing sauce. Recently tried this flavor from that company on some grilled wings. Season the wings with garlic powder, salt n pepper, after the wings have a little char on them, ill toss them in the sauce and back on the grill 3 times. By the time they're done, they fall off the bone. Every flavor ive had of that brand has been excellent.

Also been playing with brown sauce recipes for beef n broccoli which is one of my favorite Chinese dishes. The brown sauce is pretty easy- soy sauce, honey, sesame seed oil, oyster sauce, and corn starch. I think thats all but turned out delish and super easy to make.

Sounds good! I do a variation of this without baking it all together instead using scrambled eggs we call breakfast totchos.
