Duratec is the only way to go spraying something that big, you mix it in 50/50 with the last coat only, it cuts sanding time at least by half , probably more and will actually give it some sheen.
Now for the bad news, all that other crap is going to have to come off or the gelcoat is never...

All SMC has fabric in it, that is the way it is made, yes the whole ski is SMC, polyester resin will adhere to it about the same way Bondo adheres to a Bondo spreader. At this point I suggest you do a search on google and put in the website x-h2o.com, this has literally been covered to death here.
One suggestion here and this is how Yamaha does it on the couches, take a small plastic cup, like a jello shot cup, fill it full of epoxy and cabosil then stick it down over the insert, Yamaha uses the green glue of death, epoxy cabosil should work just as well. It seals the insert to the hull...
