Too much compression, and not enough oil is your first problem. Nothing less then 40:1 or you are asking for trouble..... You were running 50% less oil then you should have been! And On more compression then you can safely run per 98 Octane fuel (as it sounds).

I here ya. I was gona go with a ported 701 as it will be all the power I would ever need for surf aplication. But then at the races this weekend my ADD started kicking in, and now I am thinking of a limited 787 Sea poo motor.... Then I could have a sick freeride/surf comp ski with a little too...

Thats not to bad. Maybe just try to stay back a little more in the tray, sounds like you just have too much hull in the water.
A small battery and a Kart tank will surely take alot of weight off the nose.... but you have to be willing to make a sacrifice on fuel range. I get about 45-50 minutes...
