Just a thought, I used to have a kawi 550 that would want to veir off to the side at speed. Every thing looked normal when I rolled it over to inspect the bottom until I noticed that the ride plate was slightly warped and hung down about 1/16 of an inch lower than the scoop grate on one side. Just that slight difference caught enough water to off set the handling. I seen scoop grates that are lower than the ride plate which doesn't cause a problem but when its reversed it causes a tiny disruption in the water flow and makes the ski unstable.
