Custom/Hybrid Through hull cooling line selection

I know I've read some threads on this before but of course I can't seem to find any now.
I'm going to be running some through hull cooling lines in a hull soon and I'm trying to decide whether to buy stainless tubing, or go with some type of metal fittings on the firewall and use rubber hose in the tray area.
If I go with stainless tubing, how thick of a sidewall do you recommend? So many options..
Anyone have any experience doing the rubber hose/fittings option? Thanks!

Will, I don't have any experience to offer, but I have the two piece screw together oem throughhull water fitting assemblies that are used on yami couches and oem water line if you want to go that direction.

I have been thinking about doing the couch fittings though the bulkheads and rubber hoses in the tray if I ever open the tray up on one again. It seems like a much nicer set up that will never leak or rot. I wish I would've done it when I had my tray apart. It would have been free instead of buying 30 bucks worth of stainless tubing.

If you do go that route if you are going to be in the tray anyway. Make sure to use the permanent squeeze type hose clamps like factory pipe supplies in their install kit in the tray area.
