Super Jet Squarenose: Temp Sensor vs Fuel tank pressure? Shut off issue.

I'm having an issue with my '91 SN 650 where it will randomly cut out completely, usually it will start right back up, but a couple times it has gone into a limp mode where the engine sounded fine but would bog at 1/2 throttle. Shut it off and let it sit, then it was fine. Richened it up just in case, and then a while later it died and wouldn't fire back up until it sat.
I've done a bunch of searching, and I'm now thinking that it's either my temp sensor or my gas tank venting. My main question is: will the temp sensor shut off the motor completely?
Any other insight as to the difference between these two symptoms would be appreciated.
 
Temp sensor cuts it back to 1 cylinder/limp mode. Not exactly sure what it does as it's a wasted spark system so it can't really cut the spark. But it definitely feels like it drops a cylinder and won't Rev up. Maybe it crazy retards the timing or something. Either way. If it's the Temp sensor. It will still run
 
Ok yeah that's good info, when it dies it's pretty instant. Also just replaced the start stop switch with OEM.
I've also been reading about coils. Could it be a coil going bad?
 
Resistance tests of the coil aren't very definitive. I've had multiple pass those test but be bad.

Output ac test of the stator is the best bet. And then connect a online spark detector and check it when the problem arises. It's easy to pop the hood. Hit the button. And see spark or no spark. Before it can cool and allow a misdiagnosis.
