As you know I have a garden and I ended up with a ton of bell peppers this year , so I was looking for a different type of stuffing , I came up with the idea of using fried rice. I was able to stuff ten bell peppers with this amount but my bell peppers are not as big as the ones in the store so figure 4 to 6 at best.
I cooked four of them last night and put the rest in a dish in the freezer ,so next time I can just pop them in the oven and cook them.

2 Cups cooked rice
2 eggs scrambled
2 tsp soy sauce
1 fried rice seasoning packet
1 cup stir fry vegetables
2 TBSP cooking oil
meat (optional )
Shredded cheddar cheese (optional)

Cook the rice , scramble the eggs , combine everything in a large skillet with two tablespoons of cooking oil , cook on high heat stirring constantly , cut and core the bell peppers , stuff with the fried rice mixture , cook at 350 degrees for 45 minutes, at about 30 minutes I pull the out and stuff the shredded cheese in the top then cook the other 15 minutes , I eat my with sweet and sour sauce but you do you.

Fried green beans

Whole green beans , fresh not canned
1 egg
bread crumbs

scramble the egg, dip the while green bean in the egg , then dredge it in the bread crumbs , if you have a deep fat fryer thats the best way to cook them but they cook just fine in a skillet or possibly an air fryer nut being from the South I know nothing about an air fryer , sounda kinda like an air guitar to me ,
Serve with ranch dressing , yummy yummy

Loaded grits : Southern style

Grits
1 egg
bacon # of pieces is up to you
shredded cheddar cheese , add as much as you like
1 medium chopped tomato
1 pinch salt

cook the bacon while the grits are cooking, put the cheese and tomato in the grits , crumble the bacon and put it in, then fry the egg in the bacon grease and add it , yeah I know what you are thinking ,tomato why , trust me I have been eating grits my whole life , the tomato addition was life changing , the combination of the tomato , bacon, egg cooked it the bacon grease and the cheddar cheese is so good it will make you want to slap yo momma !
