Does oil get old?

Found a gallon of Kawa Chem Jetski High Performance oil that has been sitting in the basement for over a year. It has a faint ammonia smell, is this a normal odor. Is this a synthetic oil and can it "get old"?
I normally use Penzoil outboard 2 cycle tcw-3, which is much more of a blue color, no ammonia smell, and this one is almost black.

I remember the Kawi oil having the strong ammonia smell. I would say that it is ok to use. Prolly just the detergent additives making it smell.

I ran across a quart bottle of 2 stroke oil that has been sitting on a shelf for about 2 years with the lid off. I went to use it but part of the oil has coagulated together. So I only use it in the weedeater and stuff.

I just poured some into a clear glass, it's definitely not used oil. It is clear and has sort of a purple color to it.
