Not sure how much fuel you have went through so far but I had an ski do the exact same thing and it was water in the fuel, the rubber seal on my gas cap was MIA.

I finally finished my FX-1 build a few weeks ago, that I started back in September. I'm glad to finally be out on the water again with a ski that rips. I couldn't be more happy with how the ski performs it's exactly what I was hoping for. Here are some pics. Hull -Tom 21 tubbies -Reinforced...

It may just be your idle is a little high for out of water. Out of water there is no pressure against the prop so the motor is just free running (if that's the right way to explain it) my ski started doing the same thing when I turned my idle up but once its in the water it idles fine.

Your cooling lines look a little different than the usually b pipe setup if the lines are all clear, try running a hose from the bottom of the headpipe to the head, unblock the other cooling fitting on the head and run that too a pisser, and a line from the top of the head pipe to the stinger...

It has a one way filter on it and it's just tucked under the rear exhaust hose.

It ended up being water in the gas. I drained the gas today and put in a fuel/water separator and a fuel filter and it ran great all day!

I just finished getting my fx together last week and the first day I rode it, it ran all day with no problems at all. The second day I rode it for about 10 minutes then made a small adjustment to the low speed screw (maybe 1/4 turn) which made it run perfect. I rode it for another 10 minutes...

Most likely it is the bendix.
