you might want to get a jetworks flow control valve to dry out the exhaust at low rpms, it will help it jump out of the water better when you slap the throttle. for as big as that engine and pump is in relation to how small that hull is, that thing should be flying out of the water like a rocket...
what makes you think it's the rings? have you done a compression test? that thing looks to be set rich as hell. you might just try dialing in the carbs a little leaner. what do the plugs look like after you run it a few braps and kill it?

what wavedemon said, you need a setup wake for a launch ramp. it also looks like you're trying to use your body to roll the ski, instead of cranking the bars to one side when you hammer it and letting the pump roll it.
those are only initial settings to start dialing with. you need to tie it off to a dock from the back of the tray in waist-high water with about 15 ft. of rope, pin the throttle and dial it in to see if that will fix it. if you can't get it to dial in that way, then look at something else being...
