I would like to know if there is anything that you can use to coat your stator and flywheel with to prevent it from rusting in the event you get water intrusion up front.

GASKETS FOR CHAMP BRAP!
I always use Threebond 1211 sealer on both sides of the gasket and use a new starter nose O-ring with lots of grease and I even 1211 where the starter touches the case. I also 1211 the stator wires rubber grommet that goes into the front cover.

I never get water in there!

You might avoid spraying anything with solvents directly on the stator coils as they are wound with varnish coated magnet wire. You don't want a solvent to break down the varnish, short out the coils and ruin them. If the coating is known safe then spray away. I would concentrate on the exposed metal parts and seal up that flywheel area to prevent water intrusion as you don't want water to be in there for any length of time no matter what.
