why is my 800sxr reving to the moon???

If you hydrolocked the motor, it could be possible that the crank seals could be damaged as well. I just got my motor back together this week from the same runaway incident you had. When I put my new crank in I could notice a big difference between the tight fit of the seals on the new crank and the loose fit on the old one. A pressure test and a spray bottle of soap is a must..
 
You can have a crack in the cases also do to the hydrolocking. You need to take the Flywheel cover off your engine. The 800's will crack underneath the cylinder right next to cylinder stud on the carb side.

It could even be somewhere else too. Hopefully it's just a intake gasket or base gasket push out.

Just ride
whatever you do, don't pull off your fuel lines or turn off the gas to stop it from running away. Your oil is in your gas so it's gonna get a spot where it has no oil! It would be the same thing as if you had a 4-stroke running away and you drained the oil while it was running away then shut it off. Youu probably have scoring on your pistons and walls and if the top of your pistons are all black you are probably running a little lean somewhere.
