Super Jet Which head and why?

I'm starting to build my 95 SN and wanted some opinions on which head I should use. I'm getting a factory b pipe and probably will be staying with the stock 44mm mikuni for now but I'm not opposed to doing dual carbs if I need to. So now I'm wondering what head I should go with or if it's even worth it with the set-up I'm going for?

ADA with 35cc domes. You can run 33cc domes if you are jetted right and take it easy on the WOT runs though. Or if you are at a higher elevation than sea level.

Either find a stock head from a 96-newer and have it milled/cut or get the ADA. Your 61X head is weaker than newer 64U castings, make sure to use a 96+ gasket if that route is taken. An ADA head looks good and has a built in girdle but can have sealing issues. The stock option will cost around $150 with a new gasket and the ADA $350.

The stock head milled down was my first option mostly because of price. How much can you safely take off a 96+ head? It's a stupid question but is the stock head gasket the best to use?
