I have an oldschool 5 mil with an MRD head that has been cut to clear the pistons, if I wanted to switch to an ADA head, could I send my current head to a competent engine builder to use as a template to cut a new set of domes without sending the entire engine?

Jetworks. I just had a set done. Send your old dome and they will put it on lathe and match it (not a perfect process, they told me there could be some variance). Knowing your squish Clearence will help

Any idea on your mrd dome size ? I may have some domes for the ada shell that are for that setup ? Flat tops or domed pistons ? Bore? If I don't have the correct domes ada will machine what you need for the cost of domes and an 85 dollar setup fee.

I do not know, it's 180 psi on 82.5mm domed pistons. I was just curious IF I wanted to change heads, if somebody would be able to replicate the dome size/shape without sending the engine out. I am sure, if I asked somebody to cut them straight away without my domes for reference, they would ask me a dozen questions to which I don't have the answer to (like cylinder height, rod length, etc.).
