Proper engine temp

I tried searching a bit but I didnt find much info. so I have some temp strips I'm going to start using. What's a general range for proper engine temp at the cyl head? For a 701 in a superjet. Basic mods, ada head, mod chamber bpipe etc

I think a lot of guys are going to suggest water temps in the 140-160 range. My ski runs very happily at a temp where I can touch the block around the head gasket surface and hold my hand there for a few seconds. I've never tested for temps but I can tell just by the reaction of the ski's performance when it's getting hotter than it likes.
