what was the advantage of doing this other than having to buy a head gasket?

The head is milled/shaved down to increase compression. Using a gasket is like adding material back on to the head and losing some of the increase in compression.

I don't know why they don't just take more material off to allow for the increase AND a gasket, maybe one of the more experienced guys will know.
