Hydroturf/Footholds?

Seems like my 2017 SJ came with hydroturf. However, I noticed people do the diamond or waffle shaped layer over the top.. I am brand new to this and wondering the benefits of the extra layer and whether or not I should be installing footholds beforehand?

Not trying to modify only to have to reverse to get to where I will eventually end up. Thanks

Footholds are personal preference. The skis you see with different patterns and colors of turf have been re-turfed. The proper way to turf is to peel/scrape off your old turf and install new with contact cement. There are loads of examples of the process on this site. If you wanted to install footholds, that would be the ideal time to re-turf.
