How can I save Excel documents as PDF's?

You can convert them to PDF's with a pdf printer such as Microsoft docuprinter (I don't know if that one is free) or PrimoPDF (I think that's free)

do you have a full version of Acrobat?

if so, you ought to be able to do it from the toolbar at the top of the screen.

I don't have Acrobat at home, but I can look at the office and post again in the morning since I have it there.

or do what Matt said and use the PDF printer from the dropdown printer selection box when you print.

Also, "I have Adobe" doesn't mean much because that is the company name. They make a ton of products. Adobe Acrobat is their pdf creator, Adobe Reader is their pdf reader.
