I've wakeboarded in the surf a bit, its pretty cool you can get way more air than off a wake. Can't be done on any day though most of the time its way to choppy, we tried a few times on days where you thought it was pretty smooth, but its completely different when you're on the wakeboard, bumps that you don't even notice on your ski will knock you of the wakeboard. The best days to do it on are when there is only 1-2 foot waves and classy conditions, a one foot wave at speed will get you dangerously high trust me :bigeyes:
The other thing is its hard to get the towing right, we found the best way was to go parallel to the wave face then whip the boarder into the critical section of the wave, with the tower able to go over the wave where it is realatively flat, this keeps tension on the rope and make landings a bit easier to handle.
There are also a few different types of flying inflatables you mentioned, the wego and manta ray are a couple I know of, couple of pics:
