Engine cuts out when I launch off a wake

I have a 2004 Superjet with quite a few mods - factory b pipe, domed head, scoop grate, hooker impeller, aluminum handle pole, bilge, foot holds.... The ski has been running fine overall, but whenever I hit the throttle and launch off of a significant wake, the ski dies when I land and then it has a hard time getting going again. It seems to take about 10-20 seconds before it is getting enough gas to go full speed again. Any thoughts as to what might be causing this?

Hard landings can dump fuel into the carbs if your popoff is low or leaking. To much fuel will make for a rich condition until it cleans back out.

A weak electrical system could be producing low spark energy.

Could be any number of things based on the limited information but I would start off with fresh spark plugs gaped correctly and go thru the carb(s).

Check your plug wires, remove the boots, take needle nose pliers and tug on the strands, if they pull out, keep cutting back until they do not pull out. Check Popoff like Dag mentioned.
