Carving SN

08+ hulls are much better at fast carving but in no way is your SN at fault for you not being able to do it. My advice is to find a buddy with a boat and ride their wake and try to keep up with the boat. Have them gradually go faster after you don't fall for a while. It's the best way there is to learn to ride fast.
Oh I know you are right, and more tray time would definitely assist in my consistency in carving at high speeds. I just think I'm tainted now that I have spent a short time on a 08'+ hull. They just do what i want my sn to do without effort

This is why I try not to ride skis that are more expensive than mine.. It happens, haha.

A lot of it is timing. Learning how much braking/decel you need is key. Those old hulls can turn really aggressively if you brake late and do a body drag. Are they as predictable as 08+, not a chance so be careful. Can hurt yourself by dragging the water at 35-45mph. I usually turn more conservatively during a race, watch how Chris fischetti does his turns back when he was on a 750 or square nose
