I have a stock 701 motor I want to bore out. Whats the max anyone has went? Does anyone have anything bad to say. I appreciate any comments.

According to them, Max is 83.0mm, yielding 735cc. Anything more requires resleeving.

I have had 61X cylinders come through here at 84mm, the sleeves are pretty thin, but seem to have held up okay.

yup I also know people who have run 84mm, making it close to a 760cc. There is power gains to be had with the larger bores in the 61x cylinder.
If you're gonna bore it out, port it.. That extra displacement needs to breathe. A ported 81mm will outperform an unported 84mm. Plus just boring out go the max without resleeving is dumb. Then you have no over bores left. Try 83mm and some cylinder porting from a reputable builder or a @yamanube template. You'll be happy with the gains.
