I have seen people using abbreviation like 61x, 61t, 64u and was just wondering what they all meant or stand for.

Referring to whole motors:
61X/61X = 701, Single carb 61X bottom end with 61X top end. Used stock in 94/95 SJ's and FX1's, and 93-95 Blasters
62T/61X = 701, Dual carb 62T bottom end with 61X top end. Used in 96 - present SJ's (maybe 96 Blaster, not sure about the topend)
62T/62T = 701 Dual carb 62T bottom end with 62T topend. Used in 701 Sitdowns other than the Blaster.
64U/64X = 760 Dual carb 64U bottom end with 760 64 topend. Used in 760 sitdowns.
The 61X topend is preferable for bottom end power, can be bored to 84mm max
The 62T and 64U topends are better for power higher in the RPM band and can be bored bigger.
What manifold?
The intake manifolds go by cases and are not interchangeable.
The exhaust manifolds go by cylinder, and they are somewhat interchangeable, with some work.
Both cases and cylinders are stamped.
