Stock for stock, 61x cylinder will make more bottom end than a 62t cylinder due to the porting. If you want playful throttle response with little to no mods i recommend 61x cylinder. But if you raise the comp and add some timing into it you can get pretty good response out of 62t and 64x cylinders

What kind of riding do you do? Stock for stock 61x ignition is better but you can add a zeel to either for great results. You're showing dual carbs with a 61x cylinder. What cases are on that? If you already have 62t cases there's no point in swapping cylinders.

Went from 190-235 psi and didn't notice much of a difference, using renegade 110 pro+ Switched to Vp113 oxy and WOW, what a difference! Up to four flips, and I tried a 360 to flip and landed it too. Running pretty well!!
