My girdled RIVA head doesn't have a spot for the heat sensor. I'm switching to a MSD Enhancer also. What do I do with the heat sensor?

most people either coil the heatsensor up and zip tie it out of the way or just cut it off

Yes.
Unplug the thing since you will have your e-box opened for the CDI change. The pass through grommet will need to be filled so that no water gets into the e-box once the wires are removed.
