Well for starters, we all have our own reasons. Some prefer the lower profile and shape for doing hood tricks. Others like that the lower profile has les drag on the ski for doing subs. Still others do it for the rear air intakes, that seem to allow less water into the ski. The center of gravity is lowered, too. Anyway you look at it lowered hoods are beneficial for freestyle riding.
Lower center of gravity and helps the ski spin on more of an axis during rolls apparently. How much of a difference it makes is pretty minimal, but it does look cool!
