How and why do you true a hull?

I've searched the topic but can't find anything other than a few people who recommend doing it when you refoam.

that doesn't make any sence. if you're doing hull work I'd fill in gouges.

usually trueing the hull is for sit downs looking for higher top speed.

I true my hull by beaching it.

The only reason I'd do it on a SJ is it one i had lots of spare time (rather work on the ski than tune the tv), and if i was doing some high end paintjob and needed a smooth even surface to design on.

why paint the bottom of the hull with a high end paint scheme if it is gonna get torn up?.

it helps with handling taking out the imperfections in the hull and making the chines and planing surfaces uniform

Supposedly Malone trues his because it "tracks" better? He said it was only personal preference and if you don't race or if your boat does not set perfectly level in the water it's mostly worthless. Kinda made sense to me.

if you are racing, you can pick up roughly 1-2 mph from truing a hull

My hull knows better than to lie to me. I have 6 spares begging to replace it.

fill the deep gouges with marine-tex or thickened epoxy
wrap sandpaper around a piece of pvc and smooth it out.
hit it with some rattle-can appliance paint
done!
