Custom/Hybrid Hood latch and hooks install advice.

I'm about to drill into my brand new Footrocket to install the hood latch and hood hooks and handlepole bracket...advice from people who have done this would be appreciated. What's the best way to figure out alignment of the latch so that it closes tight enough, but not too tight that I can't latch it properly. I'd like to do it right the first time.
