I believe the 500's draw 2.3 amps so anything between 3-5 amps should work. For something like a bilge, I'd go on the high side.
FWIW, I ship all my single bilge kits with 4 or 5 amp fuses depending on which I have in stock.

use a 3 or 5. Never had a problem with either. If you dont fuse you run the risk of a fire, ask around, LOL i have seen one go up in smoke was kinda cool for me but not the guy whos ski was burning. Luckilly it went out as soon as the wire finished melting and burning.

i just recently installed bilge pumps in 2 of my skis(single rule 500 in each) after some surf riding and when flushing skis i noticed the pump not working in one ski, i used a 5 amp fuse and it was blown, had the same thing happen in the other ski shortly there after, now i use 10amp fuses in all my bilge setups and never had a issue. either i got some lame china fuses or the peak amperage of the pump loading and unloading constantly caused the 5 to blow.

Just to be clear, if you are running dual bilges, run 1 fuse holder per bilge. It could suck if 1 bad bilge pump popped your only fuse going to both bilges.
