Super Jet bigbore + duall 44's jetting/tuning questions?

Ok here is my setup...

stock stroke bigbire 808 61x cyl @ 87mm
ported cyl and cases (62t)
ada head, not sure about domes but pump gas
protec mani with modified kawi reed cages and carbon tech reeds
dual 44 retail carbs (not oem) with OP flame arresters
MSD enhancer, lightened stock flywheel
solas mag pump, 10/16 hooker/85mm nozzle

right now I am at the following jetting
120 pilot
115 main
2.0/95 20psi
not sure on screws but around 1 turn on each

it runs well, respoinsive through out powerband, no hesitations or flat spots it seems but the plugs are black and wet.

Now here are where my questions come in...I know the plugs should be a chocolate brown so I am thinking I am rich even though ski runs good.
Am I loosing potential power from being too rich?
I am thinking of dropping down to a 110 main and seeing what that does? or should I be trying something else first?
The nature of my riding is pretty much all low and mostly midrange blipping around with a few high speed boat chasing runs, is the nature of this type of riding going to keep the plugs wet like they are or should plugs burn chocolate browm in all stages of the power band?

ANy help would be great.
