What about your stator? Is it aligned right?

So ive had multiple rockered blasters and i would run the splash guard, you can cut it off for sure but the spray off the front is crazy. I had the gen 1 rocker on mine and the spray was so bad i could barely see. So i glassed 1 into mine.

When I chopped the front off mine I used screws to hold it in place then did acouple layers on the inside. Then removed the screws and cut off the over lap on the outside. Except the bottom I left the over lap and just glassed in a bunch till it was smooth. Same for the rear, glass the inside...

Have you checked your needle an seat to make sure thier not leaking? Airbox off at an idle an see if gas is coming out of the bomb sight in the carb,

Almost sounds like your stator is breaking down. Either that or the cdi is, i would be seeing how strong your spark plugs spark cold compared to when thier hot,

Have you checked the 1 way valve on your gas tank? Is thier pressure in the tank after riding for 10mins? Do you have your temp sensor plug in? Might wanna disconect it and try again

So i had mine set up different when i ran a riva red, the top of the head should go to top of pipe, not to the bottom of pipe( by rear coupler)

Have you installed a new pump shoe? Check to make sure the pump shoe isnt hanging below the bottom of hull. It needs to be smooth with hull.
