Sounds like a carb issue to me. I was having a similar issue on a motor I am now putting in my square build. I am having the carbs rebuilt right now. We'll see if these alleviates the problem.
Just shorten the stock steering plate to make is shorter. I know it doesn't do anything to the turn ratio, but it is a cheap mod and you don't have to worry about those stupid UMI bearing caps coming loose and making the handle bars all wobbly. I don't have any problems with mine from loosening...
There are a lot of threads covering this subject. Ultimately it will come down to personal preference.
My only experience with foot holds are with Wamilton Rickter's, and now WaterDawg R.E.V. Holds. My buddy who has done most of the glassing would probably agree that the Rickters were easier...
I don't know the size but I saw someone use a hex washer head bolt instead of the philips head. Looked interesting. Easier then messing with the stupid philips bit or screw driver in my opinion.

My buddy said he used to have one of these little attatchments for the 550's back in the day when he was a kid. He said it was great b/c the smaller kids could ride the 550 with the little attatchment, then the adults take it off and go rip it up...
I know it's not a 750 pad, but here is my Square Nose superjet pad I just did a couple weeks ago.
