You can use a 90* fitting that will shoot water out the side or here's a thought. Keep your bilge clean.
Never had any dirt or oil flow out onto my tray as the oil is mixed in with the fuel not the outside of the motor and dirt has no place anywhere under my hood.
Add a bilge pump for now but please, DON'T DRILL A HOLE ON THE SIDE OF THE BOAT.

Same setup I have and till this day I haven't needed to cap off the scupper tube. As a matter of fact, I gave up on the bilge pumps about a year into the one-way. There was just no need for them.
