Gut out a Kawasaki SC and you should have a nice, stable trailer with room for all the fuel plus tools and a snack. Flat bottomed and fairly wide would make for a stable trailer unlike a narrow kayak.
I bet you could even add a set of bunks to the top of that thing so you wouldn't need a double...
