just about anything will do for the hub. It's not like it's going to see high speed or great loads.
1/4" aluminum plate should be more than enough and easy to cut. Drill the center hole to 7/8" and use a lawn tractor plastic bushing as a slide.

Much easier to unhook a trailer and drive off like a human than be stuck driving a wheelbarrow all week just to take a ski to the water on the weekend.
Looks good but the whole idea is to keep the water out as much as possible.
Get rid of the OEM air intakes on top and front and cut 2 in the back. That will give your motor more than enough air.
