Carb Tuning

I rebuilt my 89 550 and now i need to do a little tuning on my carb. I know how to do the low speed but I am kinda nervous on tuning my high speed. I know how to but just dont like doing it in fear of piston seizure, but my question is what should my mid range be set at or around???

Turn it about 2.5 turns out, run it see how it rides........ if it ok, pull the plugs.........

then run it again WOT and do a plug chop (cut motor off without letting off the gas), do this close to the bank, but dont run aground........ pull plugs, if they are black and wet then start turning them in 1/8 turn....... repeat steps until you get a nice dark brown color............
